Why the same cup means a different weight for different ingredients

A cup is a fixed unit of volume, but how much a given ingredient weighs to fill that volume depends on how densely it packs — a cup of honey, which has no air pockets and is denser than water, weighs nearly three times as much as a cup of light, airy rolled oats. This is precisely why recipes that specify weight are more reliable to follow than ones using only cups: weight has one correct value, while a 'cup' of a dry ingredient can vary noticeably depending on how it is scooped or settled.

When the ingredient choice doesn't matter at all

Converting between two volume units, such as tablespoons to cups, or between two weight units, such as grams to ounces, is a fixed ratio that has nothing to do with what is actually being measured — a tablespoon is always three teaspoons regardless of ingredient. The ingredient selector only comes into play when bridging between the two kinds of measurement, volume and weight, which is the only case where density genuinely matters.

Why does the ingredient I choose matter?
Different ingredients pack differently into the same cup — a cup of flour weighs much less than a cup of honey — so converting between a volume measure like cups and a weight measure like grams needs to know which ingredient is being measured. Converting cup to millilitre, or gram to ounce, does not need this at all, since both sides are already the same kind of measurement.
Why do recipes disagree about how many grams are in a cup of flour?
It depends heavily on technique. Spooning flour into a cup and levelling it off, the method this tool assumes, gives roughly 125 grams. Scooping the cup directly into the flour bag packs it down and can weigh 150 grams or more for the same cup. When precision matters, weighing ingredients on a kitchen scale avoids this inconsistency entirely.
Are these US cups or metric cups?
US customary cups, at 236.588 millilitres. A metric cup, used in Australia and a few other countries, is a rounder 250 millilitres, about 5.7% larger — worth checking if a recipe's origin is unclear.
